Ingredients

Chicken broth:

  • 6 cups

Soy sauce:

  • ¼ cup

Miso paste:

  • 2 tablespoons

Garlic, minced:

  • 4 cloves

Ginger, grated:

  • 1 tablespoon

Rice vinegar:

  • 1 tablespoon

Sesame oil:

  • 1 teaspoon

Chicken thighs (or pork belly):

  • 2, boneless and skinless

Mushrooms, sliced: 1 cup

Bok choy, halved:

  • 2 small heads

Carrots, julienned:

  • ½ cup

Green onions, chopped:

  • 2 stalks

Fresh ramen noodles:

  • 8 ounces

Soft-boiled eggs:

  • 2, halved

Sesame seeds:

  • 1 teaspoon

Nori (seaweed), cut into strips:

  • 2 sheets

Chili flakes or chili oil:

  • To taste

Instructions

Prepare the Broth :

  • In a slow cooker, combine chicken broth, soy sauce, miso paste, garlic, ginger, rice vinegar, and sesame oil. Stir well to mix.

Add the Protein & Vegetables :

  • Place chicken thighs (or pork belly) into the broth, ensuring they are submerged.
  • Add mushrooms and carrots for enhanced flavor.

Slow Cook for Maximum Flavor :

  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the meat is tender.

Shred the Protein & Add Bok Choy :

  • Remove the chicken (or pork) and shred it using two forks. Return it to the broth.
  • Add bok choy and let it cook for 5 more minutes until wilted.

Cook the Noodles :

  • In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.

Assemble & Serve :

  • Divide the cooked noodles into bowls and ladle the hot broth over them.
  • Top with soft-boiled eggs, green onions, sesame seeds, and nori.
  • Add chili flakes or chili oil for extra spice, if desired.
