Ingredients

Ground Chicken:

  • 1 lb

Sweet Corn:

  • 1 cup fresh, canned, or frozen

Onion:

  • 1 small finely chopped

Garlic:

  • 2 cloves minced

Diced Tomatoes:

  • 1 can 14 oz

Olive Oil:

  • 1 tablespoon

Chili Powder:

  • 1 teaspoon

Cumin:

  • 1 teaspoon

Smoked Paprika:

  • ½ teaspoon

Salt:

  • To taste

Black Pepper:

  • To taste

Lime Juice:

  • Juice of 1 lime

Cilantro (optional):

  • ¼ cup chopped

Instructions

Cook the aromatics:

  • Warm olive oil in a large skillet over medium heat. Add the chopped onions and minced garlic, stirring frequently until softened and fragrant, about 2-3 minutes.

Brown the ground chicken:

  • Add the ground chicken to the skillet, breaking it apart with a spoon. Cook for 5-7 minutes until no longer pink and lightly browned.

Season the dish:

  • Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Let the spices toast for about 30 seconds to release their full flavor.

Add the corn and tomatoes:

  • Mix in sweet corn and diced tomatoes, stirring well. Let everything simmer for 5 minutes to blend the flavors together.

Finish with lime juice:

  • Turn off the heat and stir in the lime juice for a fresh, tangy finish. If desired, garnish with chopped cilantro.
