Ingredients

Chicken :

Chicken broth :

  • 4 cups

Taco seasoning :

Onion :

Olive oil :

  • 1 tablespoon

Jalapeños :

  • 1 small sliced (optional)

Lime juice :

  • 1 tablespoon

Fresh cilantro :

  • ¼ cup chopped

Cheese :

  • ½ cup shredded (for garnish)

Sour cream :

  • ¼ cup for serving

Avocado :

  • 1 small diced

Instructions

Sauté the Aromatics :

  • Heat a large pot over medium heat and add olive oil. Cook diced onion and minced garlic for 2-3 minutes until soft and fragrant.

Add the Main Ingredients :

  • Pour in diced tomatoes, black beans, corn, and chicken broth. Stir in the shredded chicken and taco seasoning, mixing well.

Simmer the Soup :

  • Bring to a gentle boil, then reduce the heat and let it cook for 15-20 minutes, allowing the flavors to blend. Stir occasionally.

Adjust the Seasoning :

  • Taste and tweak the salt, spice level, or lime juice as needed.

Garnish and Serve :
